Valentine's cheescake

  Hello dear reader! 
Today I am going to share with you a recipe on how to make a cheesecake! This was my first time baking a cheesecake and I have to say it went perfectly. Let's get started!

For the biscuit you will need:
3 eggs
30g of flour 
30g of  starch
50g of sugar
1 tea spoon of baking powder 

For the cheese part you will need:
500g of mascarpone cheese
400g of 35% cream
200g of plain yogurt
half a tea spoon of vanilla sugar
160g of powdered sugar
30g  gelatine
juice of one lemon


Biscuit: 

Whip the egg whites until they become foamy and frothy, then add the sugar and whip it all together. After that you put the yolks of the eggs one after another and mix it.Then you put the flour, the starch and the sugar into the dough and mix it all again. You pour the batter into the baking tin and bake it at 190C for approximately 15min. After that you should let it cool a little.

Cheese part:

You pour a 100ml of cold water over the gelatine and let it swell. In a separate bawl mix the yogurt, the lemon juice, the powdered sugar, the vanilla sugar and the mascarpone cheese. Over a low flame melt the gelatine. When it's cool  pour it into the cheese mass. Mix it together, then put it in the fridge and leave it there for a couple of minutes until it becomes jelly. But don't leave it to long! While you are keeping the mass in the fridge, whip the cream and pour it into the jelly cheese mass and blend it together.

 
Then you pour the cheese mass over the biscuit and leave it in the fridge for 4 hours to stagnate. When the cake is ready you can decorate it with fruit such ass strawberries.
